Brewing the Old Cabin Classic IPA with New Bohemia Brewing Co.

Photos by Bruce Dorman The brewmaster at New Bohemia Brewing Company, Dan Satterthwaite, is a humble guy as he says, “I don’t make the beer, I just create a perfect environment and let the yeast do all the work.” We don’t think it’s quite that simple, and we’re glad to have his brewing wizardry behind the Old Cabin Classic IPA, which will be released at the Old Cabin Classic this weekend. We had the chance to help make this beer last week, and it will be ready to drink just in time for the race, letting you enjoy the beer at its ultimate freshness. If you've been to an MBOSC event, you've probably enjoyed a NuBo beer. NuBo has been our beer partner for the last few years, and we feel so lucky to have such a great local brewery quenching our thirst. They say that their goal as a brewery is to "focus on beers that strike a perfect balance. Every brew involves ingredients and characteristics that are in dynamic tension--whether it's tension between the sweetness of malt and bitterness of hops, or a tension between alcohol and yeast. Finding this balance, where subtle complexities of each element can be expressed without diminishing other traits in the beer, is the art and craft of various brewing traditions that have evolved over millennia." See, we knew there was some wizardry involved here! We were at NuBo from start to finish of the brewing process, and it was amazing to get hands-on experience brewing a special beer made just for MBOSC and the Old Cabin Classic. We were right there for every step, from milling the grain and stirring the mash, to watching it boil and soak as the conversion from grain to sugars to alcohol took place, all while letting amazing flavors develop. And you can bet we'll be right there to have a drink once the brewing process is complete! Dan put a lot of thought into what characteristics and flavors he wanted in the Old Cabin Classic IPA because he knew it needed to be the perfect beer for racers to enjoy after crossing the finish line. Here’s how he describes this special brew: “The Old Cabin Classic IPA will be a crisp, sessionable IPA that is light in body with subtle caramel flavors to compliment the West Coast style hops. It will feature flavors of tropical fruit, such as passion fruit and papaya, to compliment the dry hop of Citra Hops, which has a citrus dominant flavor with West Coast dank. To finish it off, we’ll add citrus zest from the market to make this a great post-race beer.” Sounds delicious, and we can't wait to enjoy a pint along with all the racers and spectators at the Old Cabin Classic.
